In a world filled with noise, it’s fun to go to the cozy and comfort of Gilmore Girls. A quaint town where they close streets for parades (why does that sound familiar), everyone looks out for each other, and there’s great food. That’s where Luke’s Diner, Season 4 Episode 9, comes in.
On a typical visit to the diner, Luke surprises them with an unusual positive attitude, declaring the offering of pumpkin pancakes with “homemade” cinnamon butter.

all-purpose flour 1 cup
sugar 1 tbsp
baking powder 1 tsp
baking soda ½ tsp
pumpkin pie spice 1 ¼ tsp
salt ¼ tsp
buttermilk 1 cup
pumpkin puree ½ cup
large egg 1 each
melted butter 2 tbsp
vanilla extract 1 tsp
Cinnamon Butter Ingredients:
unsalted butter, softened ½ cup
powdered sugar 2 tbsp
ground cinnamon 1 tsp
vanilla extract ½ tsp
Method of Prepation:
– In a small bowl, combine the softened butter, powdered sugar, cinnamon, and vanilla. Stir until smooth.
– Set aside, or refrigerate if you want it firmer, but take it out ahead of time to soften before serving.
– In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
– In another bowl, whisk together buttermilk, pumpkin puree, egg, melted butter, and vanilla extract.
– Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; some lumps are okay.
– Heat a non-stick skillet or griddle over medium heat. Grease with a little butter or oil.
